Corned Beef Fritters made with WW2 rations

Description

These fritters were made at the National Eisteddfod in 2012 as part of the 'Festival Flavours' campaign by People's Collection Wales and True Taste Wales.
The recipe was a popular one during rationing.
In gredients:
2oz self-raising flower
pinch of salt
one egg (powdered or fresh)
Dash of milk
A pinch of herbs e.g. thyme
2 teaspoons of grated onions
6oz corned beef
A little oil or dripping.
Method:
Mix the flour with the salt and the egg beaten with a dash of milk.
Beat to a smooth batter.
Add the corned beef, onions and herbs Heat the oil or dripping in a pan and put a spoonful of the mixture in pan, pressing it down to create a small fritter. The mixture should make around 8 fritters.
Fry until brown and crisp and serve with vegetables or salad.
