Pickled Herrings

Description

Ingredients

  • six fresh herrings
  • one teaspoonful pickling spice
  • one pint vinegar
  • onion rings
  • a little salt
  • quarter pint cold water (approximately)
  • one teaspoonful black treacle
  • a little cornflour

Method

  • Put the herrings (split open and cleaned in the usual way) in an earthenware dish and cover with the vinegar and water.
  • Add them to the spice, salt and onions.
  • Dissolve the treacle in a little warm water and pour it over the herrings.
  • Blend the cornflour with cold water and add it to the liquid in the dish.
  • Bake in a slow oven until the bones have disintegrated.

Pickled herrings and baked jacket potatoes made a delicious meal for dinner or supper.
