Pickled Herrings
Description
Ingredients
- six fresh herrings
- one teaspoonful pickling spice
- one pint vinegar
- onion rings
- a little salt
- quarter pint cold water (approximately)
- one teaspoonful black treacle
- a little cornflour
Method
- Put the herrings (split open and cleaned in the usual way) in an earthenware dish and cover with the vinegar and water.
- Add them to the spice, salt and onions.
- Dissolve the treacle in a little warm water and pour it over the herrings.
- Blend the cornflour with cold water and add it to the liquid in the dish.
- Bake in a slow oven until the bones have disintegrated.
Pickled herrings and baked jacket potatoes made a delicious meal for dinner or supper.
